Almond and Date Chia Pudding

Rumour has it that the Aztec’s referred to chia seeds as ‘running food’ and were all they ate to sustain them in battle. So these little guys are the PERFECT fuel for a busy day as they’re full of fibre, protein, Omega-3 fatty acids and various micronutrients.

This Chia Pudding is such a quick, easy and nutritious breakfast, pudding or even a snack. The almond milk makes it deliciously creamy while the dates and maple syrup give it a lovely, natural sweetness. Finally this is all topped off with our best selling Coconut Paleo Bar – a coconut lover’s dream made from sunflower seeds, desiccated coconut, coconut flakes, coconut oil and raw honey for an intense coconut taste without any grains, gluten, refined sugar, soy or dairy

You’ll need…

  • 4 tbsp of Chia Seeds
  • 250 ml of Almond Milk (Unsweetened, we love Rude Health’s or Alpro)
  • 2 dates, chopped up
  • 1 Vanilla pod
  • 1 tsp of maple syrup (optional)
  • 1 Primal Joy Coconut Paleo Bar
  • Blueberries and flaked almonds to garnish

Pop chia seeds, almond milk, dates, maple syrup in a jar or bowl and give a good stir to combine, de-seed the vanilla pod and add to the chia mix. Cover and leave the fridge for a minimum of three hours, but preferably overnight to let the chia seeds expand and soak up all of the delicious almond and vanilla mixture. When ready to serve add some blueberries and flaked almonds and top with our Coconut Paleo Bar for that that amazing coconut taste and added texture.
